Empal Suwir Cabai

Empal Suwir Cabai

Ingredients:
2 slices Empal (made by my mommy, don't ask me the recipe. I only know how to fry and eat it)
3 shallots (sliced)
1 tomato (chopped)

4 red chilies (chopped)
2 chilli padi (chopped)
Salt, pepper and sugar to taste
Juice from 1 lime
Cooking oil













Instructions:
1. Fry empal and set it aside to cool.

Blend chopped tomato, red chilies and chilli padi with food processor and then set it aside.
3. Reheat the pan, using the left over oil from frying empal, saute shallot until fragrant.

Add tomato and chili mixture and cook until the water evaporated. Add more cooking oil if needed.
5. Season it with salt, pepper and sugar and continue cooking until it's done. You can tell by the smell :).
6. In the meantime, when the meat (empal) is cooled down, shred it with your hand or fork, whatever works for you.

7. Toss the shredded meat. Mix well and continue cooking around 2 mins.
8. Pour in the lime juice, cook for another 1 minute. 
9. In the end, the food should taste spicy, salty, a bit sour from the lime juce and a bit sweet from the sugar. Slurppppss!

I serve this with rice mixed with komatsuna (Japanese spinach mustard). 
Komatsuna can be replaced with chye sim.
